Spicy Crunchy Sweet Potatoes

Here's the low-effort, tasty side dish for your Christmas menu!

Harissa is a great touch of hotness for your Christmas dinner, and I especially love the taste of aniseed. We enjoyed these sweet potatoes with fried tofu (covered with dijon mustard and breadcrumbs) and the Orange & Rosemary Compote from my last post!

Spicy Crunchy Sweet Potatoes

(serves 4 as a side dish)

    •    ~700g sweet potato
    •    1-3tbsp harissa paste (depending on how spicy you like it)
    •    2tbsp soy sauce
    •    2tbsp veggie oil
    •    2dl pumpkin seeds

 

Peel the sweet potato and cut into cubes. Place the cubes on an oven tray / dish. It's easier to first mix together the oil, soy sauce, and harissa, and then mix in with the sweet potatoes. Bake in the oven in 200°C for 30 minutes, add the pumpkin seeds (no need to mix!), and bake for another 10 minutes.
