… but it’s a salad?! Yes it is and this salad is definitely my new brunch favorite! Trust me, you need to try this.
Not to mention what a great, simple way to draw admiring glances to yourself in your sunday brunch table. People will totally say things like “What? It is a salad I’m eating?! I completely thought it was delicious marmalade and toast! I can’t believe you made this! You brave genious!”.
People will probably say something like that. I would imagine.
“Toast and marmalade” salad
• 4tbsp white wine vinegar
• 3tbsp orange marmalade
• 1tbsp toasted sesame oil
• a pinch of salt & some pepper
• ~200g mixed greens
• 1 red or yellow pepper
• toast or other type of white bread
I like to use the traditional kind of orange marmalade, the one that has some orange peel in it!
Making the toast and marmalade salad:
Start with the vinaigrette: mix together the vinegar, marmalade and oil. Season with salt and pepper.
Wash the mixed greens and the pepper. Slice the pepper and mix with the greens. You can add the vinaigrette into this salad base now to let it marinate, or you can add the vinaigrette later straight to your portion. I prefer to add it right away so that the salad gets a lot of flavor.
Cut your bread or toast into bite-size pieces and toast on a dry pan until nice and crispy. (I have to come clean: I burned the other side of my croutons because I was too busy taking pictures. You might’ve not noticed this because I turned them around for the pictures. But it still tasted good so I’m only one part liar.)
Enjoy your toast and marmalade! …salad.
This time around I had this salad for lunch so I fried some smoky tofu on the side. Okay, this time even the picture doesn’t lie, the tofu is a little bit on the burned side as well. But that’s how I like it! I also love those tulips. I got them for my boyfriend on Valentine’s day because I’m just a modern woman like that. But they are pretty, and as my sister always says: tulips mark the beginning of spring! And it really feels like spring is on it’s way, fast.
